Cooking with the Seasons

Why seasonal ingredients bring freshness, variety, and inspiration to the menu, and how they shape what arrives at your table.

The Aurevanto Team

Cooking with the Seasons

Our menu is never quite finished. It moves with the calendar, and that is by design. When an ingredient is at its best, it needs very little help from us. Our job is to notice that moment and build a dish around it.

Following the produce

Each change to the menu starts with what is good right now. Early autumn brings sweeter roots and deeper greens. Winter asks for slower cooking and richer sauces. Spring returns brightness and crunch. We plan around those shifts rather than against them.

Small changes, often

Some dishes stay for a full season. Others appear for a few weeks and disappear when the ingredient does. If a favorite plate is missing on your next visit, ask our team. There is usually a story about why, and often something new in its place.

Curious about what is on the menu this week? Take a look at our current dishes or reserve a table and let us guide you.
